Thanks to the generous grant for “Project Connect” from Kaiser Permanente Community Benefits Program, youth in our Sanctuary Youth Shelter have experienced and enjoyed cooking with staff. Youth have participated in two nutrition classes where they have learned how to make healthy and easy recipes.
Using recipes that encourage vegetables and fruits, youth chose to make green eggs with spinach. At first, they were hesitant about using spinach but after making the meal one youth stated, “I didn’t like spinach, but it didn’t taste all that bad.”
Youth will continue to participate in monthly nutrition classes introducing them to healthy recipes. After each nutrition class, participants will write a reflection essay on what they learned and how they felt about participating in the activity. Each youth will take a copy of the recipe to keep and reference as they work toward building a healthy lifestyle. |
